Water: 72% - Protein: 4.4 grams - Carbs: 21.3 grams - Sugar: 0.9 grams - Fiber: 2.8 grams -Fat: 1.9 grams


Every essential amino acid the body needs,

tons of healthy vitamins and minerals the body needs,

great source of dietary fiber,

anti-oxidants,


BUT ALSO!


Anti-Nutrients/bad stuff: Saponins, Oxalates, Phytic Acid, Trypsin Inhibitors, Tannins

What Does That Mean?

It means they can leech minerals and breakdown proteins so your body can’t use them


How Do You Fix that?

Soak quinoa overnight in water, maybe a dash of apple cider vinegar, drain and rinse before you cook them.


PLUS - Sprout them to increase nutrients and antioxidants.

Not really, it’s got lots of carbs


Does it Make You Gassy?

Got tons of fiber so if you’re lacking fiber and eat a bunch of it then yes.

They all have different stats:

Black and Red varieties have higher Fiber, Minerals, and Antioxidants, as well as lower saponins


Does it Raise Blood Sugar?

Raises blood sugar but not dramatically / glycemic Index of 53
